Ingredients

  • 8 oz. (1½ cups) 230 g (350 ml) yellow onion, cut into thin wedgesyellow onions, cut into thin wedges
  • 10 oz. (3 cups) 280 g (750 ml) fresh broccoli
  • 2 tbsp 2 tbsp coconut oil
  • 1 lb 450 g cooked chicken breast, slicedcooked chicken breasts, sliced
  • 14 oz. 400 g unsweetened coconut milk
  • 1½ tbsp 1½ tbsp green curry paste
  • 2 tbsp 2 tbsp unsweetened peanut butter
  • salt and pepper, to taste
  • 1½ oz. 45 g salted peanuts finely chopped, for topping

Making low carb simple

Instructions

  1. Peel the lower part of the broccoli stem with a potato peeler or a small sharp knife. Cut the remaining broccoli into thin rods lengthwise, so that the florets and the stem are still joined together.

  2. Heat the oil in a wok or a sauté pan, over high heat. Fry the broccoli and onion for a few minutes, stirring frequently, until crisp-tender.

  3. Add the chicken breast, coconut milk, curry paste, and peanut butter to the wok. Stir together, and let it simmer for a few minutes to enhance the flavors. Season with salt and pepper to taste.

  4. Just before serving, sprinkle each dish with chopped peanuts! Enjoy.

    It would be great if you had a "print my recipe" next to recipe. When one prints the recipe we have to print all the stuff at the bottom of the page wasting ink and paper. I only want the recipe on a nice page and not all the other stuff.

    Super tasty!! Part of the success may be with the base green curry paste. I finally found a good one (Thai and True, Oregon US). Used 2 tbsp of paste with 2 tbsp of Adam's peanut butter. So good, my 13 year old had seconds! Highly recommended for a quick and easy mid-week meal, especially with leftover chicken or turkey. No sides required...

    Just made this tonight and was fantastically surprised by the amazing taste. The only change I made was to use red curry instead of green curry because that's what I had on hand. I thought I would eat 2 servings because it tasted so delicious and was surprised to hardly eat 1!! Very filling! Thanks for the wonderful recipe!

    Is the chicken supposed to be cooked before adding it in? It seems like just adding raw chicken and let it simmer "for a few minutes" won't cook it through.

    Yes, the ingredient list specifies cooked chicken.

    Whole family loved this. Made as per recipe except browned raw chicken breast cubes first. Added the rest of the ingredients and simmered for 15mins and the brocolli remained crisp. Served on zoodles. Amazing dish.

    Learn from my mistake: be sure to use UNSWEETENED coconut cream. I bought the Goya brand coconut cream and didn’t notice that it had a whopping 18 g net carbs per serving, with 12 servings per 15 oz can. We didn’t notice until after we devoured our servings. I should have known something was up with how sweet it tasted. I never would have suspected the 17g of added sugar per serving. My wife and I were so close to our 2 month keto milestone, but no way we aren’t kicked out of ketosis.

    I got this recipe about 95% correct as far as keto goes. It's AMAZINGLY delicious! I used Maesri green curry paste and realized when I was done cooking that it contains sugar. So I accidentally added sugar + extra carbs. I also used unsweetened coconut cream because I didn't have coconut milk, and unsweetened almond butter as I was out of natural peanut butter. I will definitely make this again with curry paste that doesn't contain sugar!
