  • 4 tbsp Walden Farms Russian Dressing
  • 7 oz deli ham (100g per 3.5 oz) NO SUGAR ADDED, sliced thin - AP
  • 6 tbsp Sauerkraut fresh probiotic type best!

Quick Pickled Cucumber:

  • 1 Cucumber
  • 1 tbsp salt
  • 1.5 cups water
  • 1/2 cup white wine vinegar
  • 1/2 scoop powdered stevia * (1/64 tsp per 1/2 scoop)
  • 1 bay leaf
  • 1/4 tsp allspice

Instructions

  1. Pickle the cucumbers first: Thinly slice cucumbers, using a mandolin if possible to make very thin slices. Place in a bowl and add salt, toss to combine and let sit for 30 minutes

  2. Bring water, vinegar, stevia powder, bay leaf and allspice to a boil then allow to cool.

  3. Rinse cucumbers then pour water/vinegar mix into bowl with cucumbers. Cover and refrigerate for at least 3 hours before using.

  4. Heat ham by wrapping in aluminum foil along with 2 tbsp water. Steam in 350 degree oven for 10 minutes.

  5. Toss ham in a large bowl with sauerkraut, pickles, and Russian dressing. Coat thoroughly.

  6. Serve while warm!

Recipe Notes

If you would like a neater presentation, spread dressing on ham directly then lay on plate and layer with homemade pickles and sauerkraut

Pickles in this recipe are a great snack so make a double batch

Serve on top of one melba toast for an open faced, crunchy Reuben sandwich (use some of the pickle juice to soak the melba toast for a more acidic treat)

*This is based on the Trim Healthy Mama stevia brand that I personally use and linked to in the recipe which is quite concentrated. Stevia potency really varies from brand to brand so you may need to adjust the level of stevia to more or less depending on which one you use.

    Your photos are just so lovely! I have tried several Walden Farms products and the aftertaste is hard for me to get over. Is there anything else you would recommend in lieu of that Russian dressing? The pickles will definitely be a new side item for us, very tasty!

      Hey Robin! Thank you so very much! I love doing food photography so much- a total undiscovered passion for me. I am actually with you on the walden’s farm products- many feel fine with them and like them which is why I incorporate them here and there- but I personally feel terrible if I consume them! Let me see- as a substitute- I googled this – I think we will try to come up with our own homemade russian dressing to post on this site- in meantime- here’s a couple ideas to try (I don’t have know about ratios yet sorry) – But what I’ll do is post 2 recipe links I found for traditional dressings and then I will suggest some subtitutes –

      So for us maybe what could work:
      Minced onion – maybe 1-2 tbsp?
      A small amount fat free greek yogurt in place of mayo (like 1 tbsp per serving)
      Fresh horseradish grated – maybe like 1 tsp?
      Hot sauce is still fine
      Tomato paste to sub for ketchup
      Stevia to taste to compensate for the sweet taste it has
      possibly little bit of pickles
      braggs aminos in place of worchestershire
      paprika
      salt
      blendered all up.
      We’ll work on coming up with an actual recipe!
