So easy to make and tastes absolutely amazing! Perfect for not only St. Patrick's Day but any night you want a rich, hearty family dinner.

I know corned beef is normally thought of around St. Patrick's Day but my husbands family loves it year round.

While we definitely make corned beef and cabbage for St. Patrick's Day we also make this Corned Beef Shepherd's Pie dish year-round.

It is so filling that it is perfect for a chilly night when you want the perfect comfort food.

I like to think of it as a combination of shepherd's pie and corned beef hash all thrown together in a casserole dish.

Ingredients

This is a quick overview of the simple ingredients that you'll need to make an amazing Corned Beef Shepherd's Pie! Specific measurements and step-by-step instructions are included in the printable recipe card at the bottom of the post.

  • Corned beef
  • Potatoes
  • Sauerkraut
  • Onion
  • Butter
  • Scallion
  • Milk

Corned Beef - We used canned corned beef for this recipe but you could use leftover corned beef.

Potatoes - You can make fresh mashed potatoes or use leftovers. You can even use a packaged mashed potato if you are short on time.

Equipment needed

Stock Pot - You will want a large pot to boil the potatoes in.

7X11 Baking Dish - We use a casserole dish to evenly spread out all of the ingredients.

Frying Pan/large skillet - For cooking the onions and corned beef.

Non stick cooking spray - to make it easier to remove from the casserole dish.

How to make Corned Beef Shepherd's Pie

I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

Step 1 - In a pot, begin to boil potatoes. Cook them until they are soft. Drain. Add the milk, scallions, and HALF of the butter, salt and pepper and mash the potatoes.

Step 2 - In a frying pan, begin to sauté the onions

Step 3 - Add the corned beef and continue to sauté until cooked through and a bit caramelized.

Add the sauerkraut and stir everything together.

Step 4 - In a 7 x 11 baking pan, grease, and place the corned beef mixture.

Step 5 - Dollop the mashed potatoes on top and smooth out so they’re even. With a fork, scrape the top of the potatoes lightly.

Step 6 - Place in the oven and bake, Remove from oven and brush over the remaining butter.

Let the dish sit for 5 minutes before serving

Preparation and Storage

Make Ahead – This can be made ahead of time and stored in the fridge overnight. Bake as directed below but it may need an additional few minutes.

Storage – Store leftovers in an airtight container in the refrigerator.

Freezing/How to freeze – Freeze in freezer safe baggies or containers labeled with the date.

How to reheat – Reheat in the microwave or oven.

Recipe Variations

Substitutions - Garnish with thyme, add in lamb for additional flavor,

Additions - Add cheddar cheese for more flavor, garnish with ketchup or a few drops of Worcestershire sauce, add in celery, carrots, cabbage, garlic, or your favorite vegetables for a thicker shepherd's pie.

Vegetarian Option - This recipe is hard to make vegetarian. I have not heard of a plant based corned beef quite yet.

Vegan Option – This recipe is hard to make vegan.

Gluten Free - Double check the ingredients you plan to use to make sure there is no hidden gluten fillers.

Smaller Serving Size – This recipe can be cut in half to make a smaller serving. Just use a smaller serving dish.

Larger Group/More servings – This recipe can easily be increased to feed a larger crowd. You can also double the corned beef to make it a more filling meal.

Ingredients

  • 12 Ounce Corned Beef canned
  • 3 medium potatoes
  • 3 cups sauerkraut
  • ½ Onion sliced
  • ¼ cup Butter
  • 1 green onion chopped medium
  • ¼ cup Milk or cream

  • In a pot, begin to boil potatoes. Cook them until they are soft. Drain. Add the milk, scallions, and HALF of the butter, salt and pepper. Set aside and preheat the oven to 350

  • In a fry pan, begin to sauté the onions

  • Add the corned beef and continue to sauté until cooked through and a bit caramelized

  • Add the sauerkraut and mix everything together.

  • In a 7 x 11 baking pan, grease, and place the corned beef mixture.

  • Dollop the mashed potatoes on top and smooth out so they’re even. With a fork, scrape the top of the potatoes lightly.

  • Place in the oven and bake for 30 minutes or until the top is lightly golden.

  • Remove from oven and brush over the remaining butter.

  • Let the dish sit for 5 minutes before serving
